Ingredients
  1. 1 Summeripe yellow nectarine, sliced into 10-12 slices
  2. 2 slices plain bread (we like sourdough)
  3. 1 very ripe avocado
  4. 1/2 lime
  5. 1-2 tablespoons crumbled feta cheese
  6. Handful of baby arugula
  7. Salt & Pepper (to taste)
  8. Olive oil
Instructions
  1. Scoop out avocado into a bowl, add in lime juice, salt & pepper. Roughly mash the avocados with a fork.
  2. Split avocado mixture onto the two bread slices, add nectarine slices and crumbled feta.
  3. Place onto a baking sheet to toast in the oven or on the grill (medium high heat) until the bread is toasted and cheese is slightly soft.
  4. Remove from oven/grill and top with a drizzle of olive oil, salt, and baby arugula.

Ingredients
  1. 1/2 cup Summeripe peach puree, approx. 2 Summeripe peaches, skin removed, sliced & pitted
  2. 1/4 cup honey or agave nectar
  3. 2 tablespoons coconut oil
  4. 1 cup old fashion oats (not quick cooking)
  5. 1/2 cup quinoa, rinsed and drained
  6. 1/2 cup pumpkin seeds
  7. 1/2 cup sliced almonds
  8. 1/4 cup flax seeds
  9. 1/4 cup brown sugar
  10. 1 teaspoon salt
  11. 1/4 teaspoon cinnamon
  12. Pinch ground ginger
Directions
  1. Preheat oven to 300 degrees.
  2. Place peach slices into a blender and puree until smooth. (Tip-Slicing peaches over the blender will help capture all the peach juice)
  3. In a small bowl combine peach puree, honey or agave nectar and coconut oil, whisk until blended. Set aside.
  4. In a medium bowl combine and mix all dry ingredients.
  5. Add the peach puree mixture to the dry ingredients and toss to coat.
  6. Line a 11x16 baking sheet with parchment paper, evenly spread granola mixture onto parchment paper. Bake for 45 minutes or until golden brown. Remove from oven and let cool for 30 minutes.
  7. Once cooled, break crisp granola into bite size pieces, store in an air tight container/jar.

Batter
  1. 2 Summeripe Peaches, diced
  2. 1 egg
  3. 2 cups flour
  4. 12 oz. (or 1 1/4 cups) plain Greek yogurt
  5. 1/2 cup raw sugar
  6. 1/2 cup canola oil
  7. 1/4 cup light brown sugar
  8. 2 tablespoons honey
  9. 2 teaspoons baking powder
  10. 1/2 teaspoon baking soda
  11. 1/2 teaspoon pure vanilla extract
For the Bran Crumb Topping
  1. 1 cup All-Bran cereal
  2. 1/2 cup walnuts
  3. 1/4 cup Summeripe Peaches, diced
  4. 6 tablespoons butter, melted
  5. 4 tablespoons light brown sugar
Instructions
  1. Preheat oven to 400 degrees. Grease muffin pan or line with paper liners.
For the Batter
  1. In a large bowl mix the yogurt and honey.
  2. Add Summeripe Peaches, both sugars, canola oil, vanilla and egg to the yogurt mixture, mixing until combined.
  3. In a separate bowl, stir together the flour, baking powder and baking soda.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
For the Bran Crumb Topping
  1. Combine the bran, walnuts and sugar in a food processor until coarsely ground.
  2. Stir in the melted butter.
  3. Add in the diced Summeripe Peaches
  4. Fill the prepared muffins cups with batter and divide the crumb topping over each muffin.
  5. Bake for 20 to 25 minutes. The muffins are done when a toothpick inserted in the center comes out with moist crumbs attached.Transfer to a cooling rack and allow to cool completely.

For the Vanilla Frosting
  1. 1 cup Powdered Sugar
  2. 11/2 Tablespoons Milk
  3. 1/2 teaspoon Vanilla Extract
For the Maple Cinnamon Frosting
  1. 1 cup Powdered Sugar
  2. 1 Tablespoon Maple Syrup
  3. 1/2 teaspoon Milk (add more if mixture is too dry)
  4. Dash of Cinnnamon
Instructions
  1. Core the Summeripe Galaxy Donut Peaches with a small pairing knife & remove the skin if desired
  2. Mix your favorite frosting ingredients together into a shallow bowl. For easy dipping, use a bowl that is large enough to dip the Summeripe Galaxy Donut Peaches into. Start with the minimum amount of liquid and add more as needed, the frosting mixture should be thick enough to coat a spoon but not so thick that the frosting would need to be spread on with a knife
  3. Dip the top half of the Summeripe Galaxy Donut Peach into the frosting and let the frosting settle for a few seconds in your hand. Then dip the frosted side into your favorite topping such as sprinkles, chocolate chips, or coconut flakes.
  4. Serve the Summeripe Galaxy Donut Peaches within 10-15 minutes for the most "donut" like appearance. Enjoy!!!

  2. 4 cups of raw walnut pieces
  3. 2 tablespoons butter
  4. 3 tablespoons agave nectar or 4 tablespoons of honey

  1. 1. Preheat oven to 400 degrees.
  2. 2. Spread walnut pieces onto a cookie sheet. Roast for 10 minutes.
  3. 3. Remove from oven and let roasted walnut pieces cool on the cookie sheet.
  4. 4. In a blender, puree the Summeripe Nectarine pieces to make nectarine pulp.
  5. 5. In a small bowl add agave nectar and 4 tablespoons of the pureed Summeripe Nectarine pulp, stir until blended.
  6. 6. In a skillet over medium high heat, melt butter, being careful not to burn.
  7. 7. Add sweeten Summeripe Nectarine mixture to the hot skillet, stir until blended. Continue to stir until thicken, 1-2 minutes.
  8. 8. Add roasted walnuts to the skillet, stir until coated.
  9. 9. Remove from heat and spread glazed walnuts back onto cookie sheet.
  10. 10. Roast the glazed walnuts at 400 degrees for 6 minutes.
  11. 11. Let cool. Store in refrigerator.
